WThis is a home-style interpretation of a drink found on our latest menu. This is a batch pre-mixed that is packed with the tastes of a holiday season, rendering it excellent for your holiday party. Save the extra syrup you can use for morning drinks, desserts, or to mix another batch of the drink.
The Bikini Cocktail
Yields 10 guests
To make the Citrus Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Cocktail (makes 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
Making the Cordial: Place all the items in a saucepan, bring to a light boil, mixing until the sugar dissolves. Then, remove from the stove and leave to cool down completely. Transfer to a clean bottle, seal and store in the fridge, it can be stored for up to a month.
To make Batch Mix: Pour every spirits and syrup in a big jug, allow it to infuse for 60 minutes, then filter it , ideally through cheesecloth, so it's completely strained.
To serve: Pour 85ml from the batch mix into a cocktail shaker filled with ice, and stir carefully for a minute to chill. Filter into a frosted cocktail glass or equivalent, top with the cranberries and finish with a quick spritz of mandarin oil over the top.
